For this year's Annual Chili Cook Off, entries were judged on the following criteria:

Color and general appearance
Aroma (should smell appetizing)
Consistency (should not be runny, greasy, lumpy or dry)
Texture (should have a good variation between beans and meat)
Taste (most importantly, there should be no dominant taste)
Aftertaste (sometimes called the "bite" or "heat")
